Turn oven to 350F and grease 9x9 ceramic dish lightly with olive, avocado, or coconut oil.
In a large bowl and using a whisk, mix together the egg, monk fruit sweetener, and maple syrup until combined thoroughly.
In the same bowl, begin to incorporate the gluten-free oats, chia seeds, cinnamon, nutmeg, baking powder and salt, until just incorporated.
Slowly pour the milk into the bowl and using the same whisk, combine all the ingredients together.
Using a spatula, begin to fold in the sliced peaches.
Carefully pour the bowl of ingredients into the prepared baking dish.
Remove the prepared streusel from the fridge and using your fingers to break up the ingredients, begin to sprinkle the topping on top of the filling in the ceramic dish. Distribute evenly until the top of the filling is covered with streusel.
Bake in oven for 25-35 minutes, or until top of streusel is golden brown.
Remove from oven and allow to cool for at least 10 minutes before diving in. Feel free to throw some yogurt or heck, even some ice cream if you'd like and enjoy!
