High Protein Rice Crispy Treats (healthy, gluten free, vegan)

A classic treat with the tastiest twist! These High Protein Rice Crispy Treats are thick, gooey, and packed with ingredients that will keep you full and nourished. Satisfy your cravings guilt-free!

Ingredients
  

  • 5 tbsp Butter, plant-based
  • 5-6 cups Marshmallows, vegan
  • 1 cup Vanilla protein powder, plant-based
  • 5-6 cups Rice Krispy cereal, gluten free
  • 1 tsp Vanilla
  • ΒΌ tsp Salt

Instructions
 

  • Line a 9-inch square pan with parchment paper.
  • In a large pot over low-medium heat, melt butter until it starts to foam, roughly 3 minutes. Reduce the heat and continue to cook, stirring constantly with a spatula for another 2-3 minutes.
  • Turn off the heat and add the marshmallows to the pot. Stir the marshmallows until they're well coated and begin to soften, about 1 minute.
  • Return the heat to low, then add salt and protein powder, stirring until the ingredients and marshmallows are almost smooth, about 1-2 minutes. Turn off heat, stir in vanilla, add cereal, and using a large silicon spatula, fold in the mixture until cereal is completely coated.
  • Using the spatula, pour into prepared baking pan, gently pushing and spreading the cereal to fill out the pan. (Avoid pressing down to pack it all in if you can, as we want fluffy treats!)
  • While the rice crispy's are still warm, top the treats with your choice of topping (optional) and a very light sprinkle of flaky salt. Let cool for 30 minutes before cutting. Use a sharp knife on a cutting board to slice. Enjoy!
