📋 Key Ingredients to make High Protein Rice Crispy Treats
Just 6 simple ingredients will be used in this recipe and can be combined in just 15 minutes to produce a delicious treat ready for you to enjoy. Check out the ingredients and instructions for how to make these below.

- Rice Crispy Cereal – I use a gluten-free rice crispy cereal as that’s what works best for me and my body, but feel free to use whichever cereal you prefer!
- Marshmallows – I love using vegan marshmallows to keep things dairy-free and for this recipe, vegan. Again, please use whichever marshmallow you enjoy the most.
- Protein Powder – a plant-based vanilla protein powder is what’s used in this recipe to keep things vegan and nutritionally packed! Any protein powder would work great in this recipe, just be mindful of the flavor as it will change the end result. Vanilla is always a great option for protein baked goods!
- Butter – I used a plant-based butter for this recipe as I tend towards the side of things being dairy-free. A grass-fed butter would enhance this recipe even more!
- Vanilla – Just a bit of vanilla in this recipe to really create a robust flavor
- Salt – A pinch of salt to balance out the sweetness

⏲️ How to make High Protein Rice Crispy Treats
There’s really just simple 3 steps to make this recipe. I’ll break each one of them down below, but first you’re going to either use butter to grease a square baking pan, or use parchment paper for this step (my preferred preference for an even easier clean-up!)

In a large pot over low-medium heat, melt butter until it starts to foam, roughly 3 minutes. Reduce the heat and continue to cook, stirring constantly with a spatula for another 2-3 minutes.

Turn off the heat and add the marshmallows to the pot. Stir the marshmallows until they’re well coated and begin to soften, about 1 minute.

Return the heat to low, then add salt and protein powder, stirring until the ingredients and marshmallows are almost smooth, about 1-2 minutes. Turn off heat, stir in vanilla, add cereal, and using a large silicon spatula, fold in the mixture until cereal is completely coated.

Using the spatula, pour into prepared baking pan, gently pushing and spreading the cereal to fill out the pan. (Avoid pressing down to pack it all in if you can, as we want fluffy treats!)
While the rice crispy’s are still warm, top the treats with your choice of marshmallows or sprinkles and a very light sprinkle of flaky salt. Let cool for 30 minutes before cutting.
Once cooled, remove from pan and transfer to a cutting board. Cut with a sharp knife.

📖 Variations
While I haven’t tried many variations of this recipe (yet) so many ideas came to mind! The peanut butter variation I can vouch for and it’s divine.
- Cinnamon – add cinnamon to the recipe at the same time you add the salt and protein powder. Could also add some pecans or walnuts to this to give is extra flavor, texture, and nutritional value.
- Birthday Cake – add colorful sprinkles and maybe use a birthday cake protein powder to make these even more fun and vibrant. Fruity pebbles cereal would add some extra flavor and make them super kid-friendly!
- Peanut Butter – make peanut butter rice krispies treats by adding ⅓ cup of natural peanut butter into the mix just as you’ve melted the marshmallows. This would make for an incredible protein bar and healthy snack! Cashew butter would work great as well for those with a certain dietary needs.
- Chocolate – chocolate is always a good idea. Either add chocolate chips to the cereal when you’re mixing it in, or create a chocolate topping by melting chocolate chips with 1 tsp coconut oil and drizzle on top of the treats after they’ve cooled. So delicious.

🥣 How to store High Protein Rice Crispy Treats
These delectable little treats will keep best for up to 5 days, stored in an airtight container at room temperature, and 7 days stored in an airtight container in the refrigerator.
Pre-wrap these treats after they’ve been cut with some plastic wrap so they’re easy to grab and go for work, snacks, or kids!
💭 Top tip
You’ll want to watch carefully when melting the butter. This stage can move pretty quick depending on the temperature, so it’s always best to go low and slow if possible. The butter should go from a golden color to a medium-brown, not dark brown or black.
