    With these donuts, you Know you’re getting what you need to fuel you and your body with what it needs for the day! These donuts make for the perfect breakfast, snack or even dessert for you to enjoy throughout the week, or impress your friends and family with! They are the perfect combination of sweet and savory, so enjoy these babies anytime, anywhere.

    We’ll be creating a baked donut with the most delectable cake texture, followed by a quick cinnamon streusel coffee cake topping, finished off with a drizzle of the most delicious plant-based glaze. Trust me when I say that these are easy to whip up and are the perfect addition to your day!

    Ingredients to make these High Protein Coffee Cake Donuts

    This healthy donut recipe will begin with a cake base, then we’ll get into the cinnamon streusel topping and then wrap it up with a simple glaze that’ll tie this flavor bomb of a recipe together!

    Coffee Cake Donuts:

    • Almond Flour: Always a solid flour for the base of any cake-like recipe!
    • Tapioca Flour: This ingredient binds all of the ingredients together and gives it that sponge-like texture we all know and love.
    • Plant Protein Powder: Protein Powder can be added to almost any recipe and allows the nutritional component to increase tremendously!
    • Monk Fruit Sweetener: A personal favorite when it comes to sweeteners. A little goes a long way!
    • Cinnamon: How else are we going to make this coffee cake without a bit of cinnamon?
    • Baking Soda: Another staple for nearly every baked good – it helps these babies rise!
    • Salt: Last of the dry ingredients of this recipe, a pinch of salt to round out the flavors.
    • Eggs: Bring the ingredients together and allows for the rise of the donuts we’re looking for.
    • Ghee: Most baked goods need an oil to bind and personally, ghee is my go-to – Too many nutritional benefits to opt for!
    • Almond Milk: A dairy free milk option to moisten the batter and provide some additional protein and color.
    • Vanilla Extract: Last but not least for the donut batter, vanilla extract to enhance all the flavors!

    Cinnamon Streusel Topping:

    • Almond Flour: This gives us that bit of fluff we’re looking for!
    • Maple Syrup: Sweeten things up by adding 1 table spoon of Maple syrup; or 2 if you’re looking for something a little more sweet.
    • Vegan Butter: Brings all the ingredients together.
    • Cinnamon: Add ½ tsp of cinnamon or 1 tsp for extra flavor!

    Glaze:

    • Powdered Monk Fruit Sweetener: Sugar is an absolute must for any base of a glaze. To make powdered monk fruit sweetener, just toss ¼ cup monk fruit sugar in a blender and blend away until powder forms! Super quick and easy, promise!
    • Almond Milk: makes it extra drizzly.
    • Tapioca Flour: Binds up the ingredients for a bit thicker of a glaze.
    • Coconut Butter: Melted coconut butter is a go-to for any melted icing or topping of sorts. It’s not overly coconut flavored and when melted, makes the perfect drizzle!
    • Vanilla Extract: A staple for enhancing all of these incredible flavors.

    Instructions to make High Protein Coffee Cake Donuts

    Myth: donuts are hard to make. Truth: they are just as easy as muffins and are actually very similar! The only difference really is a donut pan rather than muffin tin.

    To begin, preheat the oven to 350ºF and grease or line a donut pan.

    In a large bowl, mix all of the dry ingredients

    Using an electric mixer, add in all of the wet ingredients for the donuts and mix until batter forms.

    In a medium bowl, mix together the cinnamon streusel topping.

    Spoon the donut batter into the donut pan and sprinkle the cinnamon streusel topping evenly over the batter.

    Bake for 15-50 minutes, or until toothpick comes out clean.

    Let cool for at least 20 minutes.

    While donuts are cooling, make the glaze by adding all of the ingredients into a small bowl.

    Mix until well combined and fill ziplock bag with the glaze.

    Cut one of the corners of the ziplock bag and drizzle glaze over donuts as desired.

    For some alternative toppings, feel free to add extra cinnamon, chopped nuts (pecans would be amazing), or even a peanut butter or chocolate drizzle for some extra goodness. If you’re a big fan of variety and keeping things fresh, a drizzled on jam or compote would taste absolutely phenomenal. Have fun with it and make it as delicious as you prefer!

    To create these High Protein Coffee Cake Donuts, start with a donut baking pan, nonstick spray, one large bowl, one medium bowl, one small bowl, spatula, spoon and ziplock bag. For measuring, you’ll need ¼ tsp, ½ tsp, 1 tsp, 1 tbsp, ¼ cup, and 1 cup.

    FAQ for these High Protein Coffee Cake Donuts

    So, how are these donuts good for you? These donuts are made with two key ingredients that make them much healthier than any alternative: protein and monk fruit sugar. In just 6 donuts we’re packing in at LEAST 40 grams of protein – just from the protein powder alone! That’s not including the protein coming from the eggs or flours, either.

    The other key ingredient mentioned is monk fruit sugar. You’ll notice that the vast majority of my recipes use this sweetener as it’s a zero-calorie sugar that you just can’t beat if you’re trying to keep your sugar intake low. That and it still provides that satisfaction of something sweet which is pretty paramount for someone with a sweet tooth that just won’t quit.

    A Note on Protein

    If you’re similar to me and have a hormone disorder to manage like PCOS, then packing in protein anywhere you can and keeping your sugar intake low is absolutely essential if you want to keep those hormones level stabilized and cravings at bay.

    Protein is such a vital ingredient in order to maintain your mood, motivation and concentration. It’s what helps regulate your thoughts, feelings, and even keep you fuller for longer. Making sure to get a bit of protein in every few hours is one of the best ways to nourish your body and mind, ensuring for a more happy and productive day where you can feel at peace.

    There’s no need to sacrifice the things you love and enjoy, we just need to get a little creative with natural, whole food to find what works best for you!

    • 1 Donut Pan

    Ingredients
      

    • 1 cup almond flour
    • 2 tablespoon tapioca flour
    • ½ cup plant protein powder vanilla
    • ¼ cup monk fruit sweetener
    • 1 ½ tablespoon cinnamon, ground
    • 1 teaspoon baking soda
    • ¼ teaspoon salt
    • 2 eggs
    • ¼ cup ghee *
    • ¼ cup almond milk *
    • 1 teaspoon vanilla extract

    Cinnamon Streusel Topping

    • ¼ cup almond flour
    • 2 tablespoon maple syrup
    • 1 tablespoon vegan butter *
    • ½ teaspoon cinnamon

    Glaze

    • ¼ cup powdered monk fruit sweetener *
    • 1 tablespoon almond milk
    • 2 tablespoon coconut butter
    • 2 teaspoon tapioca flour
    • ¼ teaspoon vanilla extract

    Instructions
     

    • Preheat oven to 350F and spray donut baking pan with non stick spray.
    • In a large bowl, mix together almond flour, tapioca flour, protein powder, monk fruit sweetener, cinnamon, baking soda and salt.
    • In the same bowl and using an electric mixer, mix the wet ingredients of 2 eggs, ghee, almond milk and vanilla extract until well combined
    • In a separate, medium sized bowl, combine cinnamon streusel crumb topping: almond flour, maple syrup, vegan butter and cinnamon.
    • Spoon the donut batter into the donut pan and sprinkle the cinnamon streusel topping evenly over the batter.
    • Bake for 15-50 minutes, or until toothpick comes out clean.
    • Let cool for at least 20 minutes.
    • While donuts are cooling, make the glaze by adding powdered monk fruit sugar, almond milk, vanilla extract, tapioca flour and coconut butter a small bowl.
    • Mix until well combined and until desired consistency is formed. Fill ziplock bag with the glaze.
    • Cut one of the corners of the ziplock bag and drizzle glaze over donuts as desired. Enjoy!

    *Almond milk can be swapped out with any other dairy free milk
    *Ghee can be swapped out with coconut oil, melted butter
    *Powdered monk fruit sweetener can be alternatively replaced by powdered maple sugar
    *Vegan/plant-based butter can be replaced with grass-fed butter
