Ingredients in these Lemon Blueberry Muffins with Streusel Topping

In these muffins, you’ll see standard baking ingredients. There’s the flour, the baking soda, the eggs, and of course, the oil. However, in these muffins you’ll notice that I swapped your typical liquid oil with a plant-based butter, used monk fruit sugar and maple syrup as the sweeteners, and of course the two stars of the show here – blueberries and lemons! These ingredients give these muffins their unique flavor that I swear tastes like a fresh and fruity coffee cake. Mmm, delish.

    • 1:1 gluten-free all-purpose flour
    • Almond flour
    • Baking soda
    • Salt
    • Eggs
    • Plant-based butter
    • Monk fruit sugar
    • Maple syrup
    • Vanilla extract
    • Almond extract
    • Lemons (juice and zest!)
    • Blueberries

How to Make The Best Lemon Blueberry Muffins with Streusel Topping

This is most definitely one of the easiest recipes you can possibly make, which is a total win in my book. It’s super quick, easy, and worth the roughly 30 minutes you’ll need to complete the recipe.

To begin, preheat the oven to 350F and line the muffin tin with muffin liners. You can also spray the liners with nonstick spray if you’d like.

In a large bowl, combine the eggs, lemon juice, butter, extracts, maple syrup, and monk fruit sugar.

In the same bowl, add the gluten-free all-purpose flour, almond flour, baking soda and salt. To avoid over-mixing, you’ll want to mix together until just a bit of the flours are peeking through.

Scoop the batter into the muffin tins, and set aside while you prepare the streusel topping.

In a small bowl, combine the flour, butter, monk fruit sugar and lemon zest. Using either a pastry cutter, fork, or your fingers, mix ingredients together until you get a nice crumbly texture.

Sprinkle streusel topping on top of batter that is already in the muffin pan.

Bake in oven for 15-20 minutes.

Let cool for at least 15 minutes before eating. Store on the counter.

Why Are Blueberries Healthy For You

Blueberries are one of the healthiest fruits that you can enjoy and if you’re not already, then you might want to start incorporating them into your diet on a daily basis. Blueberries are insanely nutritious, containing a ton of vitamins, minerals, and antioxidants that pack a punch when it comes down to the health benefits they provide.

Just one cup of blueberries provides a quarter of the recommended daily allowance of vitamin C, tons of fiber to help manage cholesterol and support the digestive system, and rich in antioxidants; which are key to reducing oxidative stress placed on the body from environmental toxins like pollution, smoke, alcohol, mold, and other free radicals that are harmful for the body.

Blueberries have even been shown to help maintain proper brain function, improve memory and mental health thanks to those said antioxidants and polyphenols they contain. Packed with sweetness, color and easily enjoyed fresh or frozen, blueberries boost heart health, your immune system, brain function, support your skin and muscles, the list goes on my friends!

Enjoy a cup of blueberries a day, they’re inexpensive and can be enjoyed by themselves, or with so many other foods and treats, like these muffins!

    • ¾ cup gluten-free all purpose flour
    • ¼ cup plant-based butter room temperature
    • 4 tablespoon monk fruit sweetener
    • zest of one lemon

    Instructions

    • Preheat oven to 350F. Prepare muffin tin by greasing the pan and then lining it with muffin liners.
    • In a large bowl and using a whisk combine the wet ingredients of the muffin mixture – eggs, lemon juice, butter, vanilla, almond extract, maple syrup. Add the monk fruit sweetener and whisk ingredients until everything is well-incorporated.
    • In the same bowl, add the gluten-free all-purpose flour, almond flour, baking soda, salt. Mix together until you see just a little flour still poking through. Using a spatula, gently fold in the blueberries (reserve a ¼ cup of blueberries to top the muffins before going into the oven. Set aside.
    • In a medium-sized mixing bowl, make the streusel topping. Using whisk, fork, pastry cutter, or your hands, mix together the gluten-free all-purpose flour, butter, monk fruit sweetener and zest of one lemon. You should have a crumbly texture.
    • Pour the prepared batter mixture into the lined muffin tin. Once the muffin pan looks evenly distributed, take the streusel topping mixture and evenly distribute the topping into each muffin cavity. Place the reserved blueberries on top of the streusel topping and bake in oven for 15-20 minutes.
    • Remove the muffins from the oven and allow to cool completely before drizzling the glaze topping. Enjoy!

    Notes

*For an alternative to plant-based butter, you are able to use whichever oil you already have on hand. Grass-fed butter, coconut oil, ghee, avocado oil – all are great options and will work well for this recipe.
*The monk fruit sweetener can be replaced with any alternative sugar you have on hand. Just keep in mind that you will most likely need to use more than what the recipe calls for as monk fruit is often sweeter than other sugars.
