In these muffins, you’ll see standard baking ingredients. There’s the flour, the baking soda, the eggs, and of course, the oil. However, in these muffins you’ll notice that I swapped your typical liquid oil with a plant-based butter, used monk fruit sugar and maple syrup as the sweeteners, and of course the two stars of the show here – blueberries and lemons! These ingredients give these muffins their unique flavor that I swear tastes like a fresh and fruity coffee cake. Mmm, delish.
- 1:1 gluten-free all-purpose flour
- Almond flour
- Baking soda
- Salt
- Eggs
- Plant-based butter
- Monk fruit sugar
- Maple syrup
- Vanilla extract

This recipe will require typical muffin-making tools like a tin, liners, and mixing bowls! Below is a complete list of everything you’ll need:
- Muffin pan
- Muffin liners
- Nonstick spray
- Large mixing bowl
- Small mixing bowl
- Zester
- Whisk
- Stirring utensil
- Spoon or ice cream scoop
- Measuring cups: ¼ tsp, ½ tsp, 1 tsp, ¼ cup, ⅓ cup, ½ cup, 1 cup

How to Make The Best Lemon Blueberry Muffins with Streusel Topping
This is most definitely one of the easiest recipes you can possibly make, which is a total win in my book. It’s super quick, easy, and worth the roughly 30 minutes you’ll need to complete the recipe.
To begin, preheat the oven to 350F and line the muffin tin with muffin liners. You can also spray the liners with nonstick spray if you’d like.
In a large bowl, combine the eggs, lemon juice, butter, extracts, maple syrup, and monk fruit sugar.
In the same bowl, add the gluten-free all-purpose flour, almond flour, baking soda and salt. To avoid over-mixing, you’ll want to mix together until just a bit of the flours are peeking through.
Scoop the batter into the muffin tins, and set aside while you prepare the streusel topping.
In a small bowl, combine the flour, butter, monk fruit sugar and lemon zest. Using either a pastry cutter, fork, or your fingers, mix ingredients together until you get a nice crumbly texture.
Sprinkle streusel topping on top of batter that is already in the muffin pan.
Bake in oven for 15-20 minutes.
Let cool for at least 15 minutes before eating. Store on the counter.

- 1 muffin tin
Ingredients
- 2 lemons juiced
- zest of one lemon
- 3 eggs room temperature
- ¼ cup plant-based butter* melted
- 2 teaspoon vanilla extract
- ½ teaspoon almond extract
- ⅓ cup monk fruit sweetener*
- 3 tablespoon maple syrup
- 2 cups gluten-free all-purpose flour
- ½ cup almond flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 ½ cup blueberries fresh or frozen
Coffee Cake Streusel Topping
- ¾ cup gluten-free all purpose flour
- ¼ cup plant-based butter room temperature
- 4 tablespoon monk fruit sweetener
- zest of one lemon
Instructions
- Preheat oven to 350F. Prepare muffin tin by greasing the pan and then lining it with muffin liners.
- In a large bowl and using a whisk combine the wet ingredients of the muffin mixture – eggs, lemon juice, butter, vanilla, almond extract, maple syrup. Add the monk fruit sweetener and whisk ingredients until everything is well-incorporated.
- In the same bowl, add the gluten-free all-purpose flour, almond flour, baking soda, salt. Mix together until you see just a little flour still poking through. Using a spatula, gently fold in the blueberries (reserve a ¼ cup of blueberries to top the muffins before going into the oven. Set aside.
- In a medium-sized mixing bowl, make the streusel topping. Using whisk, fork, pastry cutter, or your hands, mix together the gluten-free all-purpose flour, butter, monk fruit sweetener and zest of one lemon. You should have a crumbly texture.
- Pour the prepared batter mixture into the lined muffin tin. Once the muffin pan looks evenly distributed, take the streusel topping mixture and evenly distribute the topping into each muffin cavity. Place the reserved blueberries on top of the streusel topping and bake in oven for 15-20 minutes.
- Remove the muffins from the oven and allow to cool completely before drizzling the glaze topping. Enjoy!
