    One thing you’ll quickly learn about me is that I’m an absolute fiend for all things healthier dessert. Desserts in general, really. But when it comes to putting a spin on a recipe to make it healthier, I get all sorts of lit up inside.

    The best part about creating healthier desserts is being able to use whole, real ingredients that the body can use in a positive and beneficial way. Now I’m all for enjoying a decadent treat now and again, but there’s something ridiculously gratifying about shamelessly enjoying a treat everyday that just feels SO good. Knowing that I can do both and enjoy something sweet while also supporting my body in a way that feels nourishing is a feeling I don’t think I could ever get tired of.

    There are so many simple swaps that can be made in the kitchen that your body, mind and soul will 100% benefit from and thank you for. That old saying “you are what you eat” is absolutely true and to that effect, the food we eat has a dramatic impact on how we feel; and vise versa!

    You need to know that once you make this recipe, you’re going to be making them over and over and over again. They’re THAT good.

    This recipe for pumpkin blondies is SO easy, healthy, and will be ready to enjoy in about 30 minutes from start to finish. Oh and this pumpkin recipe is also gluten free and requires only a few simple ingredients that you quite possibly already have available at home. Don’t you just love a simple recipe? Meee too.

    So for this recipe in particular, I decided to get a little crazy and incorporate both white AND dark chocolate (so wild I know), but you definitely don’t have to if you don’t want to. Pumpkin pairs great with white chocolate or dark chocolate, so use whichever you have available!

    I personally love the contrasting flavor between the two chocolates and couldn’t resist a dark chocolate drizzle because who doesn’t love an extra gooey and melty chocolate boost? My partner, that’s who, and even he commented on how friggin delicious that sexy chocolate drizzle was (maybe not in so many words but you get the picture).

    What you’ll need for these Healthy Pumpkin Blondies

    Almond Flour – my favorite paleo flour to bake with, provides a moist and dense texture while still being fluffy and light.

    Monk Fruit Sweetener– I use a lot of monk fruit sugar in baking because it supports my own health and healing when it comes to keeping the sugar content low. I’ve found that this is the best sweetener to use to manage PCOS symptoms and it works well for me and many others I know as well. Monk fruit sweetener is a lot sweeter than coconut or standard sugars, so while it is more expensive, you’ll be using a lot less of it in recipes if you do decide to use this ingredient.

    Almond Butter – All natural, creamy, almond butter that is made from only two ingredients: almonds and salt. No need for all the extra sugar, and the natural runny almond butter is much better for baking.

    Coconut Oil – This is probably one of my favorite oils to bake with. Coconut oil and ghee are definitely two staples around here! If you’re not a fan of coconut or anything coconut flavor, make sure you buy one that says refined, as the unrefined one will have a much stronger coconut flavor.

    Egg – Just one egg is all you’ll need for this recipe! I haven’t had a chance to try this recipe with a flax egg, but I am almost certain it will work just the same!

    Pumpkin Puree – The star of the show here! Always love to sneak in some fruits and veggies into recipes and you won’t need too much of this to get some excellent flavor!

    Pumpkin Pie Spice – This ingredient is totally optional, but I love some extra umph in recipes and this is one I can’t resist using this time of year! Tastes so

    Vanilla Extract – A baking staple to really help enhance every flavor we’ve got going on here. If you can, get this item in bulk so you’re not having to buy it all the time if you really enjoy baking!

    Baking Soda – Another staple that we’ll just be needing a wee bit of.

    Salt – A punch of this will do the trick!

    Chocolate Chips or Chunks – I mentioned earlier that I used both white and dark chocolate chips in this recipe, but you can use whichever you enjoy best, or have on hand! Make sure to reserve a few to sprinkle on top of the batter before it goes in the oven if you decide to omit the drizzle. Or get wild like me and do both because life’s too short.

    How to make the best healthy pumpkin blondies

    The best part about these healthy pumpkin blondies? They’re seriously easy to make and will be done and ready to enjoy in roughly 30 minutes!

    The hardest part is going to be waiting for them to bake because it’s only going to take you 10 minutes to mix everything and get them in the oven.

    I’ll provide instructions in more detail in the recipe card below, but here’s a quick run down:

    First, you’ll need two bowls – one large, one medium.

    You’ll mix the dry ingredients together in the medium bowl: almond flour, pumpkin pie spice, baking soda, and salt

    Then, in the larger bowl, you’ll combine the wet ingredients and sugar: pumpkin puree, almond butter, monk fruit sugar, egg, coconut oil, and vanilla.

    Next, you’ll gently pour the dry ingredients into the wet ingredients and using a whisk, mix until just combined. Fold in the chocolate chips.

    Pour batter into the parchment lined baking pan and bake for 20 minutes.

    While the pumpkin blondies are cooling after you remove them from the oven, prepare the chocolate drizzle by melting the coconut oil and chocolate chips in 30 second increments in the microwave.

    Drizzle chocolate as desired and enjoy!

    Why is Pumpkin good for you

    The health benefits of pumpkin are phenomenal. Why pumpkin is good for you is because they’re actually a Superfood!

    Superfoods are a pretty trendy term tossed around the health and wellness space these days, but for good reason.

    This term is reserved for natural foods that have high nutritional value, packing loads of vitamins and minerals that boast health benefits across many systems within the body, aiding in health issues and preventing future ones.

    It’s a safe bet to always be incorporating a variety of colors in your diet so you can rest assured you’re getting tons of support where it’s needed, naturally.

    More specific health benefits of pumpkin include:

    • Loaded with beta-carotene, which gets converted into Vitamin A and supports eye health, skin health, and skin protection
    • Excellent source of Vitamin C, vital for strengthening the immune system, increasing collagen production, fighting infections, healing wounds and really so much more
    • Low in calories, roughly 15 calories per half cup! Making this a great vegetable for weight-loss
    • High in fiber, supporting digestion health and aiding in keeping you feel full for longer
    • Great source of potassium, a necessary mineral the body needs for healthy blood pressure, muscle contraction and also digestion (fun tip- pumpkin actually has MORE potassium then bananas, which are pretty known for its own necessary potassium benefits)
    • Full of iron and zinc, micronutrients that are essential for proper functioning, creation, building, healing, and supporting nearly every system in the body (another fun tip: these two micronutrients are excellent to take in supplemental forms as well, as the standard diet often doesn’t get enough of the recommended dose. However, these two minerals (if taken as a supplement) should typically be taken at different times so to get the full benefit of each dietary supplement)

    Why make healthy treats and dessert recipes?

    When it comes to making healthy dessert recipes, a great rule of thumb is: the more natural, whole ingredients you can incorporate, the better.

    Now of course we can make things like brownies and blondies with beans or legumes (which really can be SO delicious), but I like to keep things a bit more simple by making staple swaps to your typical baking goods that just make sense for the brain and body.

    Easy swaps like almond flour instead of all-purpose flour, or replacing your standard cane sugar for natural sugars like maple syrup, coconut sugar, and monk fruit sweetener.

    Everything we consume, including the foods we eat, environments we surround ourselves, even down to the media we consume daily, gets broken down and utilized by the brain and body. If we aren’t eating real foods or ensuring that we’re consuming things that are nurturing within the environments we surround ourselves in, then we can’t expect ourselves to feel nourished and supported.

    Feeling good on the day to day is just as important as our vitality and longevity, so let’s try and make sure we’re consuming things that will nourish us from the inside out for years to come!

    These easy pumpkin blondies are a dessert that you can feel confident about. Also, they’re spectacular.

    Perfectly chewy with a slight crisp on the outside and a subtly sweet and soft inside. The chocolate chips add the perfect bit of texture and sweetness that I know you’re going to love!

    Ingredients
      

    • ¾ cup almond flour
    • 1 teaspoon pumpkin pie spice
    • ¾ teaspoon baking soda
    • ⅛ teaspoon salt
    • ½ cup pumpkin puree
    • ⅓ cup almond butter
    • 1 egg
    • 2 tablespoon coconut oil
    • ⅓ cup monk fruit sweetener
    • 2 teaspoon vanilla extract
    • ¼ cup white chocolate chips dairy-free
    • ¼ cup dark chocolate chips dairy-free

    Chocolate Drizzle

    • ¼ cup dark chocolate chips dairy-free
    • 1 teaspoon coconut oil

    Instructions
     

    • Preheat oven to 350F and line 8×8 pan with parchment paper
    • In a medium sized bowl, whisk together the dry ingredients of almond flour, pumpkin pie spice, baking soda, and salt.
    • In a larger bowl, mix together the pumpkin puree, almond butter, egg, coconut oil, monk fruit sugar, and vanilla extract until just combined.
    • Gently pour the dry ingredients into the wet ingredients and using a whisk, mix until just combined.
    • Fold in both white and dark chocolate chips. Pour into parchment lined 8×8 pan and bake for 20 minutes.
    • Remove from oven and allow to cool before drizzling with chocolate. To make the chocolate drizzle, microwave dark chocolate chips and coconut oil in 30 second increments until desired consistency.
    • Drizzle chocolate and enjoy!
